Kacche Aam ki MeethI Lonji


Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai. Aaj hum bana rahe hain aam ka meetha achaar jo ki poori aur paranthe ke saath bahut hi tasty lagta hai.

# INGREDIENTS
  1. 250 grams kaccha (hara) aam 2 raw mangoes
  2. 50 grams gur (jaggary) aur 50 grams cheeni (sugar)
  3. 1 tablespoon oil or ghee as you like
  4. 1 pinch Hing (asafoetida)
  5. Kaccha jeera...1/2 Tea spoon ( cumin seeds )
  6. 1/2 teaspoon methi dana (roughly grind)
  7. 1 tablespoon namak (salt) for marinating mangoes and 1/2 tablespoon at the time of cooking mangoes
  8. 1 tablespoon haldi (turmeric)
  9. 2 tablespoon saunf (fennel seeds)
  10. 1 tablespoon lal mirch(red chili powder).
  11. 1 tea-spoon lemon juice,1 teaspoon roasted jeera powder and 1 tea-spoon garam masala
  12. 1 tablespoon kishmish and kaaju

# METHOD OF MAKING
  • Aam ko acchi tarah dhokar, cheel kar aur chotey pieces me cut karke namak aur haldi mila kar 2 yaa 3 ghante (2-3 hours) ke liye rakh dijiye. 
  • phir ek kadhai me ghee yaa oil ke garam hone par hing, kaccha jeera aur kuti hui methi ko chatka kar aam ke pieces ko (haldi, namak sahit) kadhai me daal dijiye. 
  • Acchi tarah chalakar 50 ml. paani daal kar dhakhkar pakana hai.
  • Aadha soft hone par jaggery aur sugar mila dijiye. Phir poora pakne par sabhi masale aur dry fruits mix karke 2 mins chalakar gas off kar dijiye. Lijiye aam ka meetha achaar taiyyar hai.

# THINGS TO CONSIDER
  1. Aam ki phaanko (pieces) ko namak, haldi me marinate  kijiye jisse aam ka aachaar tasty aur jaldi cook ho jaata hai.
  2. Sabhi masale achaar banane ke baad hi daliye.
  3. Thanda hone par clean container me rakhiye.
