Cucumber Shots ( Stuffed Cucumber Salad Recipe )

# Friends, as you know that cucumber or kheera is very healthy and revitalizes our whole body specially our skin and hair.
It is very helpful in weight loss too.
If cucumber is combined  with yogurt or curd, it becomes more effective.
#  So in this way "cucumber shots' is a very yum and healthy bites to everyone.
You can enjoy this recipe in your fasting days for a healthy break.
#  Ingredients For Cucumber Shots..
1. Cucumber....2
2.Thick curd..1|2 cup ( I hour hung curd )
3. Carrot....1 ( finely chopped )
4.Cucumber...1|2  ( seed out and chopped )
5. Pomegranate...2 table spoon seeds
6. Origano...1|4 tea spoon ( optional )
7. Some Micro green...
8.  Some Salt to taste
# How To Prepare.....
1 Firstly, wash and peel the cucumber, carrot and pomegranate.
2. Now chop the carrot and cucumber in fine pieces for stuffing.
For seeding out the cucumber, cut it in 4 pieces and seed out them with the help of a knife.
3. Then cut the 2 inch pieces of rest cucumber equally.
4. Now scoop out the pieces of cucumber with the help of a scooper or with the back end of a spoon.
4.Take a bowl and add.. thick curd with chopped  carrot,  cucumber,  seeds of pomegranate, salt and origano.
5. Mix well and stuff the cucumber with this mixture.
6.Place some micro green at the top of cucumber.
Now your cucumber shots are ready.
Enjoy the swad and sehat ( Taste and health ) together.
# Note....
1. You can take any type of micro green as beetroot, spinach, Alsi, mustard etc.
In place of micro green,  you can use finely chopped coriander leaves or stalks.

Sweet Chutney Of Curd ( Dahi ki Meethi Chutney )

# In the series of chutney recipes.....
I am present here with another luscious
Curd sweet chutney recipe.It is very delicious and healthy. You can enjoy it with roti, puree or parantha.
It tastes very nice. If you spread it on the bread, you will find it very yum.
# Ingredients For Curd Sweet Chutney..
1. Thick curd.....250 gram
2. Ripe apple....1 ( grated )
3.Green Chili....1 or 2
4. Dates...2 ( Khajoor )
5. Ginger...1 spoon ( grated )
6. cumin powder...1 tea spoon ( roasted )
7. Salt ...1|2 tea spoon or as taste
8. 2 pinch of black salt
9. Powder sugar...3 table spoon
#  Method Of Making....
1. Firstly, dip the dates in half cup water for 10 minutes.
2. Then chop and grate green chili, ginger, dates and apple and grind them in the mixture jar with the help of 1 spoon water.
3. Beat the thick curd well with hand blender or rai. Electric blender is not needed for it.
3. Now mix well,  the paste of dates, ginger, green chili and apple in the curd.
4. Add salt, roasted cumin powder and sugar in the curd as your taste.
Garnish it with fresh coriander, ginger and grated apple.
Now sweet chutney of curd is ready to serve with chapati, puree, parantha and bread.
You can also enjoy this chutney with pulao and biryani.

Coconut ( Nariyal ) Chutney Recipe For Idli, Dosa And Uttapam

Coconuts are both delicious and nutritious.This is the one fruit that can be used to take care of all your needs.
Lots of luscious dishes are prepared with coconut.
# Today I am sharing the simple chutney recipe of coconut that is loved with idli, dosa and uttapam.
# Ingredients For Coconut Chutney..
1. Fresh or dry coconut.....1|2 grated
2. Fresh green chili....2
3. Coriander leaves....2 table spoon
4. Lemon juice ...1 table spoon
5. Roasted and split chana....1|2 Cup
6. Yogurt...2 table spoon ( optional )
7. Salt..1|2 Tea spoon
8. Black salt ..1|2 tea spoon or as taste
9. Water ...1 cup or as required
#  Ingredients For Tempering The Chutney....
1.Oil...1 table spoon
2. Mustard seeds...1 tea spoon
3. Curry leaves...8 to 10
4. Urad dal...1 tea spoon ( optional )
5. Whole red chili...1 (optional )
#  How to prepare coconut Chutney..
1. Grate the coconut and keep aside.
2. Then first grind the roasted and split gram ( bhune chana ) in the mixer jar.
Because sometimes it remains ungrounded with the moisture of water.
3. Now transfer all the ingredients of chutney with grated coconut, coriander leaves, salt, green chili and lemon along with water in the mixer jar.
4.  Blend it again to make a smooth paste.
Adjust the consistency of chutney as required.
5. Take out in a bowl.
6. Now for tempering the chutney....
Prepare the tadka..
Heat the oil and crackle mustard seeds, urad dal and curry leaves. Pour this oil tadka into the chutney psste and mix well.
Coconut or nariyal chutney is ready to serve with south indian dishes like idli, dosa etc.
# Note...
1. You can use roasted pea nuts and roasted chana dal in place of roasted chana ( bhune chana ).
2. Desiccated coconut can be used in place of grated coconut.
The taste comes yum and very easy to make coconut chutney.

Some Important Cooking Tips

Today I am sharing some cooking tips that make cooking simple and perfect.
These tips are very helpful while cooking.
# Some Important Cooking Tips..
1. If your chapati dough becomes thin and sticky, first wash your hands and then add a little ghee or oil to the dough and grease your hands.
Now you can easily bind the dough without sticking.
2. To make softer chapatis, add the warm water and some warm milk for kneading the dough.
Let it rest for 20 minutes before making chapatis.
3.For making khasta, soft and delicious poore or parantha, knead the whole dough with normal cold milk only.
4. To make crispier fritters, pakode or bajjis, add a little corn flour to the gram flour to make bajjis batter.
Little rice flour also make them crispy and crunchy.
5. While rolling wheat flour roti, if you use the maida | all purpose flour as parothan,
The wheat flour roti will be more white and bright.
6. Adding few drops of oil or ghee and lemon to the rice at the boiling stage of rice, will prevent it from becoming sticky.
And rice will be more fluffy and separated.
7.To separate each string of noodles or any thin pasta, run it under cold water immediately after draining the boiling water.
8.  To remove the strong smell of onions, rub your hands with 1 tea spoon curd .
9.  When boiling potatoes or eggs, add a pinch of salt to the water.
This will help peel the skin easily later.
This tip also will take less time in boiling.
1o.  Use the excess dal water from boiling dal to make rasam. Similarly after boiling vegetables, if you don't want the extra water, the liquid can be used in gravies or for making chapati dough.
Similarly while making paneer at home, use the remaining water for making the curry or chapati dough. This water is very healthy.
11.  Toasting nuts, semolina | rava, rice and dal | lentils before cooking increases it's flavour considerably.
Toasting or frying nuts enhances the taste of any type of halwa.
12. When frying bread roll or bread pakoda, the oil should be on the high temperature in the starting, otherwise bread will absorb too much oil.
13. Use heavy bottomed vessel or wok for boiling milk and for making sweet dishes like halwa, burfi and kheer, to avoid the milk or batter from sticking to the bottom.
14. For crispiness in fried edibles, coat them with bread crumbs,semolina,oats sesame seeds and corn flour after dipping them in the flour solution.
15. Add lemon juice while cooking lady fingers to avoid the sticky texture.
And add salt at the last cooking.
Other method is that after washing lady fingers, place it on the sieve for few hours. As it is dried completely without any moisture, then cook it.
16. Add peanuts in coriander chutney to enhance the taste and colour.
17. Soak the dried lemons in hot water or microwave for 10 seconds.
18. For keeping fresh ginger and lemon,
Place and wrap them in paper envelop or cloth thin bag ( kapde ki theli ), then store in the refrigerator.
19. Place the icecream sticks and biscuits in the refrigerator, if they have become soggy and not crispy.
20. To avoid the milk sticking in the bottom while boiling, add a little water to the pan  before pouring the milk.
21. To peel ginger, scrap it with the back end of the spoon accurately and neatly with less wastage.
22. While frying,  place the edibles in spatula and gently put in the oil so that edibles remain intact without loose ends.
23. Marinate bitter gourds in salt for 30 minutes and keep aside until water comes out.Then wash them with plain water.
This method looses its bitterness partially.
24. For making soft pakodi karara or kadhi, dip them in salty water before cooking.
25.  When making kadhi ( Indian yogurt curry ) stir it continuously till it starts boiling else it will loose its form.
After boiling, add the salt in it.
And the curd should be on the room temperature.
26.  Plunge vegetables in ice water after blanching  ( boiling ) them so they maintain a bright colour.
27.  While cooking qualiflower, add a bit of milk to the water with salt to keep it white bright. Shock it in cold water to stop cooking and then serve it.
28. To remove the dirt of sugar while making sugar syrup, add 1 spoon milk at the boiling stage, as it will start foaming.
Now separate the foam with the help of a spatula.
29.  When baking, only mix untill all the ingredients are Incorporated. Over mixing causes toughness by developing gluten in the flour.
For light and fluffy cupcakes, only mix until the batter cones together.
30.  For making crispy pies ( Kachoris ), knead the dough softly...Just bind it together. Don't smooth it.
31.  For removing the stains of fruits and vegetables, rub the hands with the fresh peel of potato or white vinegar.
32. For making lump free singhade ( water chest nut )  ki burfi or halwa, after roasting the singhade flour just off the flame.
Now add measured sugar and mix it well.
Then add measured water and mix well.
Now on the flame and cook it stirring continuously.
33. After squeezing lemons, don't throw its peel, just dip in the drinking water glass or bottle.You will get a healthy and flavoured water.
34.  If Your curd has become sour, don't worry, just fill the container of curd with plain water and leave it for few minutes. After that drain the excess water.
This 2 or 3 time process will make your curd perfect.
35. Put the coriander leaves in the air tight container, spreading a paper or cloth napkin in the bottom.Transferring in the refrigerator,  you can store it till 1 week.
37. To set curd in winter...Set it in a  ceramic container and place it on the voltage stabilizer of your refrigerator.
Other options are keep in a hot box, inside the ovan ( switched off ) or keep it wrapped in a blanket.
38.  When making dishes of mashed potatoes like aloo parantha, kachori and cutlets, either transfer them in the refrigerator after boiling potatoes.
Or  after you drain the hot water of potatoes, return them to the hot pan.
Cover tightly and let it steam for 5 minutes.
This allows the potatoes to dry out.
In this way, these are some cooking tips that are very helpful and make the cooking easy.

Curd Chutney Recipe For Salad, Snacks,Instant Bread Dhokla And Veg Biriyani

# Curd chutney, as announces is a very simple recipe. It is mostly available at home. Curd is used as side dish in your food as daily routine.
# Because the unique nutritional value of curd is beneficial in various ways. It improves digestion, provides strength to bones and teeth and lowers the cholesterol levels.
# Apart from it, it enhances the taste of various food as it is used in many curries, dhokla, rice and sweets.
Then why can we not use the curd as chutney form as it is so healthy and tasty.
So today we will make curd chutney that is very tasty, simple and healthy.
# Ingredients For Curd Chutney..
1. Curd....200 gram
2. Green chili...2 ( chopped and seed out )
3. Mint leaves..1 table spoon (finely chopped )
4. Coriander leaves...1 table spoon ( finely chopped )
5. Black pepper powder...1|2 tea spoon
6. Salt to taste
# How To Prepare Curd Chutney..
1. Wash well coriander, mint and green chili.
2. slit the green chili and seed out it with the help of fork or spoon.
3. Chop the mint and coriander leaves finely.
4. Beat the curd well.
5. Now mix all the ingredients of chutney along with salt and black pepper.
If needed add 1 spoon water in the curd chutney.
Now tasty and healthy curd chutney is ready to enjoy.
6. Serve cold with salad, snacks, rice and dhokla bread.
# Note..
1. Finely chopp the coriander and mint leaves otherwise it will not taste good.
2. If you are going to use chutney later, then add salt just at the time of serving.
3. You can add  2 chopped garlic as choice.
4. For making instant bread dhokla..
Remove all the red ends of bread.
Heat a pan with 1 spoon oil
Add mustard seeds to crackle and pinch of asafoetida to sizzle.
Now spread the curd chutney on the bread and place it on the tempered tadka.
As it is cooked, flip it on the other side and cook it till light brown.
This bread dhokla will take only 5 minutes to prepare but tastes very nice.

Instant Sweet And Sour Chutney of Dry Mango Powder ( Amchur Ki Meethi Chutney )

# Chutney is an integral part of our food.
It enhances the taste of curry, dal, rice and snacks. Coriander and mint chutney is oftenly used in our daily food as side dish
# But for chaat recipes, As samosa, aloo chat, tikki, dahi bhalle etc. we need sweet and sour both chutney.
# So often, I prepare very delicious sweet chutney of amchur instantly at home.
It is very simple and long time durable too.
Let us see the recipe...
Prep Time..5 minutes
Cook Time...25 minutes
# Ingredients For Sweet Chutney Of Amchur ( Raw Dry mango powder )
1.Amchur Powder...35 gram ( 3 table spoon )
2. Sugar..150 gram
3. Jaggary...50 gram ( gur )
4. Water....250 ml
5.salt...1 tea spoon
6. Black salt...1 Tea spoon
7. Red chili powder..1 tea spoon
8. Roasted cumin powder...2 tea spoon
9. Garam masala...1|2 tea spoon
10.Ginger powder...1|2 tea spoon ( saunth ).    Optional
# Method Of Making..
1. Take a bowl,  mix and soak amchur powder with water.Let it rest for 5 or 10 minutes.
2. Heat a pan and pour the mixture in it.
Stir it well.
3. As it takes the first boil then add sugar and jaggary altogether and keep on stirring till  it melts.
Other wise the mixture of sweet chutney would come out the pan. As it starts foaming due to the sugar syrup.
4. Add salt and Let it boil for 15 or 20 minutes well.
5.As it comes on the desired flowing consistency of chutney, now add red chili powder, roasted cumin powder, ginger powder and garam masala.
6. Mix well and cook again for 3 or 5 minutes more. Off the flame.
7. Instant and delicious sweet chutney is ready to enjoy.
Let it cool completely.Then transfer it in a clean glass jar.
You can store it upto 2 or 3 months easily in the refrigerator.
Note..
1. You can make this chutney with only sugar and with only jaggary ( gur ) too.
But adding of jaggary with sugar in the chutney brings a nice taste and texture.
2. You can add  chopped dates ( chuawra ), raisins and chopped cashew nuts in some portion of sweet chutney.
It tastes very yum with dry kachori and mathris | salty crackers.

Instant Semolina Laddu ( Suji ke laddu )

# Laddu...Means a very tasty sweet dish made of lots of ghee or clarified butter and any flour like wheat, gram flour, semolina etc. and mawa, sugar and lots of dry fruits.
# No auspicious occasion is complete without sweet laddu. When ever we get a good news from anyone, We immediately say...Where are our laddus..
Laddu is a symbol of great happiness.
# So today, during the teej festival..We will make instant and super luscious semolina laddu without lots of ghee as traditional besan and aata laddu.
# Now start the recipe of.. instant semolina laddu.
# Ingredientes For Semolina Laddu..
1. Semolina...1 cup..( 125 gram )
2. Coconut powder..1 cup ( 125 gram )
3. Milk powder...1 cup (100 or 125 gram )
4.  Powder sugar....75 gram
5. Pure ghee....1 table spoon
6. Milk....1|2 cup or less than 1|2 cup as needed  for making the dough of laddu
7. Green cardamom...1 tea spoon
8. Crushew nuts....2 table spoon (cashews and almonds )
# ,Method of Making Suji ke Laddu..
1. Heat a wok | kadai and add 1 spoon deshi ghee.
2. As the ghee melts, add semolina and roast it on the medium low flame.
3. Roast the semolina well about 8 or 10 minutes without changing its colour.
The aim is to remove the rawness of suji completely.
4. After roasting it,  take it out in a big bowl or deep plate.
Let it cool down completely.
5. Meanwhile,  grind the coconut powder in the mixer jar for a very nice taste.
6. Then add coconut powder, milk powder, powder sugar, green cardamom powder and crushed dry fruits in the roasted semolina.
7. Mix well all the ingredients and make a laddu dough of it by adding some milk.
Remember, you have just to bind the dough of laddu with the help of milk.
So add a little milk in the start and sprinkle again as required.
8. Grease your hands and take a lemon size portion of laddu dough on your Palm.
Prepare round shape laddu with the help of fingers and palm.
9. Wrap the laddus in the coconut powder and serve it.
Instant and oil free laddus are ready to enjoy.
Transferring in the fridge you can enjoy these laddus upto 10 days easily.
Note...
1. If you are using grated coconut or desiccated coconut, in the both case..Grind it in the mixer jar.
Because while eating laddu, the flakes of coconut would not come in the mouth.
The grinded coconut enhances the taste and texture of semolina laddu.
2. If you don't have milk powder, then don't  bother...Just add more sugar in the equal proportion of semolina ( 125 gram )
And bind the laddus with the help of milk.
