Famous Lassi of Banke Bihari Temple..

NoHello friends, Namestay...I am sangeeta Agrawal and you are most welcomed at my blog.Friends.......Curd is very healthy even better than milk..Dahi lassi is of both types... Sweet lassi and salty lassi.
Today...We are making sweet lassi....
Ingredientes.....
1. 250 gram thick and chilled curd
2. 60 gram powder sugar
3.Rose water
4.little milk
5.completely crushed ice
6. 2 spoon dahi malai
7. Chopped and peeled Almonds for garnishing lassi...
How to prepare..
First take a deep pan (best is lota)for blending dahi lassi.....First add curd and blend it by hand Rai... Then add sugar,rose water and little milk instead of water.
Now again blend it by hand beater....Not any electric blender.... Because then it would turn thin.
After blendind lassi ..Pour it into glass or kulladh (mud pots)and add dahi malai, few drops of rose water .... now put them into fridge for getting cool.
Now Temple wali lassi is ready.
Things to consider...
1.Always use the thick curd for lassi..
2.Traditionally lassi is made by hand wooden or silver Rai.
3.Add totally crushed ice if you are just having it.
4.Garnish it as your choice... Chopped almonds or Rose  syrup.

Instant Fresh Coconut Dessert (Without Milk and Khoya)

Namaskar, I am sangeeta agrawal and welcome to all of you a lot on my blog. Friends, all of us love sweets but sometimes hesitate to have due to ghee and oil. My today's recipe is fresh coconut dessert which is oil free and tasty too.

# INGREDIENTS

  1. 1 bowl grated and grinded fresh coconut
  2. 1/2 bowl milk powder
  3. 1/2 bowl powdered sugar
  4. 1 teaspoon cardamom powder (ilaichi powder) 
  5. 1 spoon ghee
  6. Chopped dry fruits or silver vark for garnishing barfi
# METHOD OF PREPARATION

  • First on the flame and roast the coconut in ghee without changing the colour of it.
  • On the low flame add sugar and milk powder and mix it.
  • Keep on stirring the batter continuously. 
  • When the batter starts separating the pan and no moisture left, it means it is ready to set the barfi.
  • Now transfer the mixture in a greased container and garnish it with dry fruits or silver vark.
  • Let it cool for some time and cut it in the shape of your choice.
# THINGS TO CONSIDER

  1. If you do not have fresh coconut. Then grate the dry coconut and grind it in the mixture.
  2. If coconut batter remains soft then set it in the fridge.

False Ka Sharbat / Falsa Juice Recipe / Black Currant.. Indian Berry Juice

Namaste, I am sangeeta Agrawal and welcomes to all of you whole heartedly on my blog. Friends, in the summer we enjoy black currant which is nutritious, tasty and colourful fruit. Like black berry it has its own properties and has sweet and sour taste.

# INGREDIENTS
  1. 250 grams False
  2. 200 grams sugar ( boora or grinded sugar )
  3. Some crushed ice (as you want, optional)
# METHOD OF PREPARATION
  • First wash them properly but gently because they are soft and pulpy. 
  • The right way of washing is dip in the water 2,3 times and drain out on a sieve.
  • After washing false,  just dip them in 750 ml.water for 3 to 4 hours to make falsa soft and easy to mesh.
  • Now it will be more easy to mesh and we can take out the maximum juice from it.
  • After meshing the false well  with hands...sieve it in a soup strainer or wring out in a thin cloth.
  • Add crushed ice or ice cubes and enjoy it or you can transfer it in the refrigerator for some time to make it chill.
  • Just see how simple to make but very delicious and mouthwatering juice.

# THINGS TO CONSIDER

  1. Wash black currant gently.
  2. Adjust water and sugar to taste.
  3. It is of unique taste i.e., sweet and sour. No need to add any extra ingredients.
  4. You can make the icecream from it which is of wonderful taste and color.

Amazing Recipe of Katira (Tragacanth Gum Herb)

I am sangeeta agrawal and welcomes to all of you from the bottom of my heart on my blog. Friends, katira is an edible gum. It is very beneficial for stomach and calms down the heat. Today's yummy tummy recipe is of Katira.

# INGREDIENTS
  1. 1 spoon katira
  2. 3 spoon powdered sugar
  3. 1 spoon rose water
  4. 3 spoons pure rose syrup
  5. Some crushed ice
# METHOD OF PREPARATION
  • First grind katira roughly. Then soak 1 spoon katira in a bowl of water.
  • Let it soaked for few hours or overnight. Now it is ready to use for .cooking and eating purpose. 
  • We can use it in two ways: Add some crushed ice and sugar and enjoy it.
  • Second way is - Add sugar, ice cubes, rose water, rose syrup and 2 spoons water.
  • Healthy and tasty drink is ready.


# THINGS TO CONSIDER

  1. It is of cold temperature and mostly used in the Summer.
  2. It is as tasty as faluda sev and has health benefits.

Kathi Dal (Healthy Breakfast Recipe)

I am Sangeeta Agrawal and welcomes you all on my blog from the bottom of my heart. Kathi dal is a traditional recipe and it is super healthy and easy to digest.

# INGREDIENTS
  1. 100 grams moong dal (dhoba)
  2. The equal amount of water of soaked dal (1 bowl dal + 1 bowl water)
  3. 1 spoon ghee
  4. 1/2 teaspoon jeera
  5. A pinch of asafoetida (heeng)
  6. Salt to taste
  7. 1 spoon turmeric (haldi)
  8. Chopped green chili, ginger, coriander and 1 lemon
# METHOD OF PREPARATION
  • First wash the dal properly and soak it for half an hour.
  • Then put a kadhai on the flame and add desi ghee and splatter asafoetida and cumin seeds.
  • Then mix turmeric and water. After boiling the water mix moong dal and cook it at the low flame until dal becomes dry.
  • After 5 mins. lid out the cooked dal and mix chopped green chili, ginger,fresh coriander and lemon juice.
  • If you like onions.... Then add some finely chopped onions in this recipe.
  • Healthy and tasty kathi dal is ready to eat. Garnish it with coriander and green chili and lemon.

Porridge (Daliya) Pudding

I am Sangeeta Agrawal. I welcome to all of you whole heartily on my blog. Today's recipe is Porridge (Daliya) Pudding that is super healthy and delicious. It is a perfect food in itself.

# INGREDIENTS
  1. 1/2 cup porridge (roasted)
  2. 6 cup water (6 guna)
  3. 2 and 1/2cup milk
  4. saffron
  5. 1/2 spoon green cardamom powder
  6. 2 spoon raisins (kishmish)
  7. 2 spoon finely chopped and roasted nuts (Cashew, almond, chironji etc.)
  8. 100 grams sugar
# METHOD OF PREPARATION
  • First of all, cook the porridge in the water up to 1 whistle on high flame and 1whistle on the very sim flame. Porridge is cooked.
  • Then put a pan and pour the milk and boil it on the low flame for 5 mins. When it gets thicking a little, pour daliya in the milk. Let it cook for a little. Now add sugar, saffron, raisins and dry fruits and mix well.
  • Friends, healthy and yummy pudding is ready. Enjoy it by garnishing some dry fruits and saffron.

# THINGS TO CONSIDER
  1. You can cook porridge directly in the milk but it is very time taking.
  2. First cooking porridge in the water and then in the milk makes the pudding more soft and yummy.
  3. Add enough water while cooking porridge.
  4. You can make it without milk too, just add sugar to taste and enjoy it.

Choclate Banana Shake

Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Aaj-kal garmi bahut hai thanda (cold-drinks, lassi, mango shake etc.) lene ka man karta hai. Isliye aaj hum banana chocolate shake bana rahe hain jo ki super healthy and tasty hai.

# INGREDIENTS
  1. 1 cup milk
  2. 3 spoon milk powder yaa condensed milk
  3. 2 spoon powder sugar
  4. 2  ripe banana
  5. 1/2 spoon Cadbury chocolate, coco yaa drinking chocolate
  6. 1/2 cup ice cubes
  7. some chocolate chips and frozen banana cubes (For garnishing the shake)

# METHOD OF MAKING
  • Pehle glass ko chocolate sauce se sajakar (decorate) freezer mein set hone rakh dijiye.
  • Ab sabhi ko ek saath mixer me daal kar shake bana lijiye. 
  • Decorated glass me daalkar chocolate chips, frozen banana cubes aur grated chocolate se garnish kar enjoy kijiye.

# THINGS TO CONSIDER
  1. Agar Cadbury chocolate naa ho to kisi bhi dark chocolate ko melt karke shake me mix kijiye.
  2. Ek banana ke patle (thin) slices karke sugar syrup mein dip karke ek plate me freezer yaa chiller me rakhiye. Bahut hi tasty aur yummy lagte hai.

Bharva Masala Baigan (Brinjal)

Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Baigan ki sabji ko hum bahut tarah se enjoy karte hain jaise baigan bharta, baigan aaloo, floating gravy baigan etc.
Aaj meri recipe hai bharvan baigan jo ki taste me lajawab lagte hain.

# INGREDIENTS
  1. 250 grams baigan chote (small size)
  2. 3 spoons mustard oil
  3. A pinch of Hing
  4. 1/3 spoon namak (baigan mein namak thoda hi lagta hai)
  5. 1 spoon haldi
  6. 1 spoon dhaniya powder
  7. 2 spoon saunf
  8. 1 spoon lal mirch powder
  9. 1 spoon aamchur powder
  10. Chopped adrak and hari mirch
  11. 1 spoon jeera, methi, rai aur saunth powder (Roasted and grinded)
# METHOD Of
 MAKING ...
  • Baigan ko dhokar unke danthal nikalkar beech me se aise cut kijiye ki uper se baigan jude rahein.
  • Ab kadhai me oil daal kar tez aanch par garam kijiye. Jab oil achhe se garam ho jaaye tab gas off kariye. 
  • Ab oil ke thoda thanda hone par heeng daliye. Lal mirch aur khatai ke alawa sabhi masale beech me se cut kiye huye baigano me utna hi bhariye jitna aaram se bhar jaaye.
  • Sim flame par baigan ko palat palat kar sekiye .
  • Last me bache huye masale, lal mirch powder, amchur aur hara dhaniya daal kar bahut halke haath se mix kijiye.
  • Lijiye chatpatay baigan taiyar hain. Ye roti and parante ke saath bahut tasty lagte hain.

# THINGS TO CONSIDER
  1. Bharvan baigan ke liye chote size ke baigan alag se aate hain.
  2. Baigan bina paani ke hi bante hain isliye time to time flame ko off or on karke banaye.
  3. Bharva baigan k masale m sabut dhaniya,moongfali aur dry coconut ko bhunkar milane s swad badh ( increase ) ho jaata h.
  4. Baigan ke poori tarah sik jaane par mirch, aamchur aur bache huye masale mix karne se baigan ka swaad doguna badh jaata hai. Masale jalte nahi aur fresh taste aata hai.

Pure Rose Syrup


Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Gulab ke phool ki khushboo to achhi hoti hi hai aur iske bahut saare health benefits hain. Isliye hum rose flower (gulab ke phool) ko gulkand aur rose syrup ke roop me bana kar use karte hain. Meri aaj ki recipe hai Rose Syrup.

# INGREDIENTS
  1. 150 grams rose petals (500 gram rose flowers)
  2. 600 grams cheeni (sugar)
  3. 50 grams honey for preventing crystallizationn of sugar
# METHOD OF MAKING
  • Pehle gulab ke phoolon me se pankhuri (petals ) ko alag karke achhi tarah paani mein dho lijiye.
  • Phir dubara mild hot water me dip karke clean kijiye jisse agar koi germs yaa worm ho toh nikal jaaye.
  • Ab sabhi petals ko haath se hi todkar bareek kijiye aur pankhurio ko 1/2cup paani daal kar, grind karke ek rough paste banaye.
  • Ab ek bade pan mein cheeni, honey aur gulab ke paste ko mila kar ek din (1 day) ke liye rasoi mein hi rakhiye jisse phool aur cheeni  ke saath ek sugar syrup taiyyar ho jaaye.
  • Next day se phool cheeni wale container ko dhak kar yaa maheen kapde se bandhkar dhoop mein  rakh kar pakaiye. 
  • Daily ek clean spoon se chalakar dhoop (sunlight) aane par rakhiye aur dhoop jaane par utha lijiye.
  • Aajkal tez dhoop hoti hai, 5 or 6 din me hi taiyyar ho jaayega.
  • Ab ek clean jar me bhar kar thanda thanda enjoy kijiye.



# THINGS TO CONSIDER

  1. Rose syrup ko fresh flowers se hi banaye.
  2. Agar aapke yahan dhoop nahi hai yaa time nahi hai toh aanch par paka kar taiyyar kijiye aur baad me shahad (honey ) milakar ek bottle me bhar kar store kijiye.
  3. Syrup me honey ki jagah lemon yaa citric acid bhi daal sakte hain.

Aam ki Saunth aur Aam ka Panna

Namaskar...

# Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Aam (mango) ko hum sabhi pasand karte hain aur aam ki bahut saare dishes banate hain. Aaj ham kacche aam (raw mango ) ki saunth aur aam panna banayenge jo ki garmi me thandak deta hai aur bahut tasty bhi hota hai.


# INGREDIENTS
  1. 800 grams raw mangoes Total
  2. 250 grams powder sugar Total
  3. 1 1/2 tablespoon sendha namak
  4. 1 1/2 tablespoon black salt
  5. 2  tablespoon roasted jeera
  6. 1 spoon mint powder
  7. 1 spoon saunf
  8. 1/2 teaspoon garam masala for Saunth ( sweet chutney of raw mangoes )


 # METHOD OF MAKING


You can make this "Aam Panna" and "Aam Saunth " in two ways...

Either get boli raw mangoes whole in the pressure cooker or make its slices after peeling it's skin...and then make it boil directly in the pressure cooker.

Both Method are fine.  But traditionally this "Aam Panna" is prepared by get it boil raw nangoes whole.... without peeling it's skin and later is removed its pulp from its skin and Seed.

# Ingredients For 'Aam ki Saunth"


  • Pehle cooker mein 700 ml paani daal kar boil karne rakh dijiye.Tab tak aam ko dhokar, cheel kar patle slices (thin slices) me cut karke cooker mein boil kijiye. 2 whistle aane par gas off kijiye.
  • Agar kadhai yaa bhagona hai toh aam ke soft ho jaane par flame ko off kijiye.
  • Aam ka pulp jab thanda ho jaaye tab haath se masalkar chalni (sieve) mein chaan lijiye yaa mixer me halka sa grind kariye. Zyada nahi chalana hai sirf mesh ho jaaye jisse saunth zyada tasty lagti hai.
  • Ab mango pulp ko two parts mein  divide kijiye....
Ek part ki Saunth bana letey hain aur ek part ki Saunth.

#  Ingredients For Saunth....

1. Half pulp of boiled raw manga.
2. Sugar or boora...150 gram
3. Sendha salt....3/4 spoon
5. Black Salt...1/2 spoon
6. Garam masala...1/2 spoon
7. Saunf powder..1 spoon optional
8. Red chillie powder...1/4 spoon or as taste

#  Method Of Making..

  • Pahle aam ke pulp mein thoda paani  (150 ml.) aur cheeni ( 150 gram ) daal kar gas par boil kijiye.
  • Acchi tarah boil hone par sabhi ingredients mix kar gas ka flame off kar dijiye. Lijiye aam ki saunth taiyar hai.
# Ingredients For Aam Panna...

1. Half pulp of boiled mangoes
2. Grounded sugar or shakkar...100 gram
3. Sendha salt...1 spoon
4. Black Salt..1/2 spoon
5. Roasted cumin powder...1 spoon
6. Mint powder...1/2 Spoon
7. Saunf powder...1 spoon optional

Aam Panna
Aam panna ko bhi aam ke pulp mein cheeni , namak, jeera, pudina aur bahut saara thanda paani, ice cubes daal kar taiyyar kiya jaata hai.
Doston jab bhi aam ka panna banane ka man ho toh 1 part saunth ka aur 2 part paani mila kar aam panna ko enjoy kijiye.

# THINGS TO CONSIDER

#  Kachhe aam ki koi bhi sweet dish banani ho jaise: meethi chutney aur achar etc. to aam ko 2 din (days) rakhne ke baad  banaye jisse aam thoda sa soft aur sweet ho jaata hai.

# Aam Panna yaa Aam ki Saunth ko banane ke liye agar...meethi variety ka aam jaise...dasehari etc liya jaaye toh jyada achha rahta hai.

# Aam panna or Saunth mein ...saunf ko pani mein bhigo kar uska ras mila sakte hain.

# Aam ki saunth bhi amchur (khatai) ki saunth ki tarah bahut swadisht lagti hai. Aap isko side dish, mathri, paratha, poori or badi roti ke saath serve kijiye...bahut acchi lagti hai.

Besan aur moong dal pakodi or badi ko bhigoye...amchur ki Saunth ki tarah isko use kijiye.

Gulaab ae bahaar Gulkand

Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Aajkal summer ka season hai aur bahut tez dhoop nikal rahi hai. Traditionally is samay bahut saare achar aur thandak dene wali cheeze banayi jaati hain. Aaj ki recipe hai gulab ke phool (Rose Flowers ) ka Gulkand jo ki tasty ke saath healthy bhi hota hai.

# INGREDIENTS
  1. 100 grams rose petals (250 gram gulab )
  2. 400 grams cheeni
  3. 50 grams honey

# METHOD OF MAKING
  • Gulab ke phoolon se pankhuri (petals) nikal kar, acchi tarah dhokar chalni mein rakh dijiye.
  • Extra paani nikalne par, sabhi pankhuri ko haath se todha sa todh lijiye jisse cheeni me phool jaldi soft ho jaaye.
  • Ab gulab aur cheeni ko ek ke upar ek ki layer lagate huye, shahad (honey) daal kar rakh dijiye jisse cheeni gulkand set naa jaaye.
  • Ek din ke liye rasoi (kitchen) mein hi rahne dijiye jisse phool aur cheeni acchi tarah mix ho jaaye.
  • Next day ek spoon se achhi tarah mix karke dhoop (sunlight) mein rakhna shuru kijiye. 
  • Gulkand ko malmal ke kapde (cloth) se bandh kar yaa jaali (sieve) se dhak kar daily dhoop aane par rakh dijiye aur evening me ek baar clean spoon se chalakar rasoi mein rakhiye.
  • Isi tarah 7 yaa 8 din (days) mein gulkand taiyyar ho jaayega.
  • Dhoop me banaya hua gulkand kabhi kharab bhi nhi hota hai aur bahut saare health benefits hain.

# THINGS TO CONSIDER
  1. Gulkand cheeni ki chashni mein hi pakate hain isliye matra sahi rakhiye.
  2. Gulkand ko crystalize hone se rokne ke liye lemon yaa citric acid ka bhi use kiya jaata hai.
  3. Gulkand ko clean, sterilized container mein bharkar store kijiye.

Oats Banana Kesar Barfi

Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Oats (jai) aur banana (kela) hamare liye bahut healthy hain isliye aaj hem inki sweet dish bana rahe hain. Meri aaj ki recipe hai Oats Banana Kesar Barfi.

# INGREDIENTS
  1. 3 tablespoon oats (roasted and grinded)
  2. 3 ripe banana (cut into thin slices)
  3. 3 tablespoon powdered sugar
  4. 3 tablespoon milk powder
  5. 3 tablespoon kaaju powder
  6. 3 tablespoon sugar for caramelizing oats
  7. 2 tablespoon finely chopped dry fruits
  8. 6 yaa 7 choti ilaichi powder
  9. 20 dhaga kesar or a pinch ofsaffronn colour
  10. 400 grams milk
  11. 1 tablespoon ghee
# METHOD OF MAKING
  • Pehle kadhai me grinded oats ko bina ghee ke hi achhi tarah roast karke alag rakhiye.
  • Phir 1 tablespoon ghee daal kar kele ke  pieces ko mesh karte huye achhi khushboo aur kadhai se alag hone tak  bhooniye.
  • Ab ek alag kadhai me doodh daal kar boil aane par milk powder aur sugar powder ko mix kijiye. Lagatar chalate rahiye thick hone tak.
  • Ab pehle wali banana (kele) ki kadhai me thodi ilaichi powder mix karke banana paste ko doodh mein daal dijiye.
  • Isi kadhai me 3 tablespoon sugar aur 1 tablespoon paani mila kar cheeni ko caramlize karte huye oats mix kariye.
  • Ab  flame ko off kar thoda sa chalakar doodh mein mix kijiye.
  • Ab doodh, banana aur oats wale mixture ko jaldi jaldi ghumate huye thick kariye. 
  • Kesar, ilachi aur pinch of colour ko add kijiye. Aur zyada thick hone par kaaju powder aur dry fruits milakar barfi ki jamne ki consistency par ek ghee lage container me palatkar, ghee lagi katori se daba kar barfi ko set kijiye.
  • Chopped dry fruits aur thodi si kesar daal kar garnish kijiye. Lijiye oats banana kesar barfi taiyyar hai. 

# THINGS TO CONSIDER

  1. Oats ko grind aur roast zaroor kariye jisse iska kacchapan naa rahe.
  2. Caramelize oats ko banana mein mix karne se barfi ka taste bahut hi swadisht aata hai.
  3. Banana ki dishes me ilaichi mix karne se easy to digest hoti hain.
  4. Barfi ki garnishing mein kesar ko milane se barfi bahut hi mahak wali aur mouth watering ban jaati hai.

Moong Dal Bhog

Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai. Aaj hum bana rahe hain Moong Dal bhog jo ki hamare yahan prasad ke roop me bahut hi shradha ke saath lagaya jaata hai.

# INGREDIENTS
  1. 100 grams moong dal chilka
  2. 100 grams parmal yaa kheer, khichdi chaval (rice)
  3. 3 tablespoon desi ghee
  4. 1 teaspoon kaccha jeera, pinch of Hing
  5. 1 tablespoon haldi (turmeric), dhaniya powder, red chili powder, black chili powder
  6. Whole spices: 4 long (cloves),4 choti ilaichi, 2 badi ilaichi,1dalcheeni stick (cinnamon), 2 tejpatta (bay leaf), javitri, chakra phool, pinch of jaifal (nutbeg) powder
  7. 1/2 spoon salt
  8. 2 tablespoon chopped dry fruits
  9. 1 tablespoon sugar
  10. mixed vegetables as aaloo, tomato, beans, gobhi, shimla mirch etc.
  11. Paani (water) 5 guna dal chaval ke liye aur 1 bowl vegetables ke hisab se (Total 6 bowl)
# METHOD OF MAKING
  • Sabse pehle dal chaval ko achhi tarah 4 or 5 times dhokar, 1 ghanta (hour) ke liye bhigo dijiye.
  • Ab kadhai yaa cooker me 2 tablespoon ghee daal kar hing, jeera ko chatkakar dry fruits ko roast kijiye.
  • Ab sabhi whole spices daal kar thoda sa roast karke aur sabhi pisey huye masale aur vegetables mila kar 2 min. roast kijiye.
  • Ab dal chaval daal kar thoda sa bhooniye. 
  • Last me measured paani yaa anuman se paani daal dijiye. Paani me boil (ubal) aane par cooker ko band kar keval 1 whistle dijiye aur pressure ke khatam hone par check kijiye.
  • Agar kadhai yaa bhagona hai to tez flame par boil kar gas ko ekdam sim kar dhak dijiye. Pani ki  awaz ke khatam hone par kholiye. 
  • Dal bhog khichdi ekdam khili khili taiyyar milegi. Ab dhaniya, 1 tablespoon ghee aur dry fruits daal dijiye. Lijiye moong dal bhog taiyyar hai.
# THINGS TO CONSIDER

  1. Prasad khichdi me paani ki matra ko kum yaa zyada adjust kijiye.
  2. Right ratio hai: 6 guna pani aur bheege huye ka 2 guna.
  3. Agar  khichdi zyada liptama chahiye to hot water mila kar adjust kijiye.

Honey Chilli Lauki Kofta


 Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Lauki ki sabji bahut hi healthy hoti hai agar hum isse kuch alag taste me banaye toh sabhi khaana pasand karengey. Meri aaj ki recipe hai Honey chilli lauki kofta.

# INGREDIENTS FOR KOFTA
  1. 300 grams grated lauki
  2. 100 grams besan or as per needed
  3. 1 tablespoon dahi
  4. 1 teaspoon namak,1 pinch of Hing
  5. 2 hari mirch
  6. 1 tablespoon grated ginger

This recipe has two Gravies:
  1. 2 tomatoes,4 hari mirch,1 inch ginger piece
  2. 15 kaaju (cashew nuts), 2 tablespoon white til (sesame seeds),1 tablespoon honey and 50 grams milk 
# INGREDIENTS FOR TADKA
  1. 2 tablespoon desi ghee
  2. 1 tablespoon haldi, dhaniya powder aur lal mirchi
  3. whole spices: 1tea spoon jeera, pinch of hing, 2 badi ilaichi, 4 choti yaa hari ilaichi, ek piece dalchini, bay leaf, javitri
  4. 200 ml. milk
  5. 200 ml.water or as per needed
# METHOD OF MAKING
  • Pehle hum lauki ko achhi tarah dhokar, grate karenge aur kasi huyi lauki ko paani sahit sabhi ingredients ko mila kar ek kadhai me ghee yaa oil daal kar kofta ko fry kar ek napkin par nikal lenge.
  • Ab ek kadhai me ghee daal kar jeera, hing ko tadka kar sabhi sabut masale (whole spices) bhoon kar tomato gravy ko mix karengey aur tab tak bhunegay jab tak gravy se ghee alag hone lage.
  • Ab second gravy jo kaaju til ki hai usey bhi daal kar lagatar chalate huye roast kariye.
  • Thick hone par doodh mila kar ghee chodhne tak bhooniye. 
  • Ab paani add karke boil aane par salt as your taste aur kofte mix kar 5 min. pakakar gas off kar dijiye. Hara dhaniya aur hari mirch se garnish kar enjoy kijiye.
# THINGS TO CONSIDER

  1. Grated lauki ke hisab se besan ko adjust kijiye. Bas itna hi daliye jisse batter bind ho jaaye zyada nahi. Ekdam soft kofta taiyyar hoga.
  2. Gravy me namak baad mein hi daaliye jisse taste achha aata hai aur kuch bhi phatne ka chance nahi rehta hai.
  3. Kofta gravy ko soak karte hain isliye paani ki matra ko adjust kijiye.

Lauki Kofta Karara



Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Aajkal lauki ka season hai aur bahut hi fresh lauki mil rahi hai isliye aaj ham lauki (bottlegourd) k kofta banayenge jo ki khaane me bahut tasty lagte hain. Meri aaj ki recipe hai Lauki Kofta Karara jinko roti, paranthe yaa rice ke saath khaa sakte hain.



INGREDIENTS


  1. 300 grams grated lauki
  2. 100 grams besan or as per needed
  3. 1 teaspoon salt as per taste
  4. Chopped hari mirch and ginger
  5. 1 teaspoon crushed kali mirch
  6. 1/2 spoon citric acid (neembu ke phool)
  7. Ghee or oil for frying kofta

INGREDIENTS FOR GRAVY OF KOFTA

  1. 100 grams dahi (curd)
  2. 1 teaspoon jeera (cumin seeds),1 pinch of heeng, 1/2tea spoon red chili powder
  3. 500 ml. water or as needed
  4. 1 tablespoon haldi (turmeric), dhaniya powder

INGREDIENTS FOR TADKA
  1. 1 tablespoon desi ghee
  2. 1 teaspoon jeera, 1/2tea spoon heeng, 1 teaspoon pisi huyi lal mirch (red chili powder)
  3. 2 sabut lal mirch

# METHOD OF MAKING
  • Sabse pehle lauki ko achhi tarah dhokar, cheel kar grate karenge aur ab grated lauki ko bina nichoday (squeeze) kiye bina sabhi kofta ingredients ko milakar aur achhi tarah masalkar lauki ke chote balls banakar kadhai me deep fry kar ek napkin par rekh denge jisse extra ghee nikal jaaye.
  • Ab kadhai me sabji banane se pahle ek bowl mein dahi ko achhi tarah beat karke paani milakar alag rakhiye.
  • Ab ek kadhai me ghee garam hone par hing jeera ko chatka kar masale daal kar zara sa bhooniye.
  • Phir dahi paani ko daaliye aur lagatar ubaal ke khatam hone tak chalate rahiye jisse dahi phat naa jaaye. 
  • Zaroorat k hisab se aur pani mila lijiye. Ab kofte daal kar thodi der boil kar gas band kariye.
  • Tadka lagaa kar mix kijiye. Lijiye lauki kofta karara taiyyar hai. Hara dhaniya se garnish kijiye.
# THINGS TO CONSIDER

  1. Grated lauki ko squeeze naa kare jabki isi me besan etc. milakar kofta fry karen. Isi wajah se kofte ekdam soft bante hain.
  2. Lauki ke hisab se besan ko kum zyada adjust kariye.
  3. Namak (salt) gravy me boil hone ke baad hi daalna hai.
  4. Agar kofta soft naa bane to 1 spoon dahi yaa 1 pinch baking soda add kijiye.
  5. Agar dahi pahle mix karne par gravy phat jaati h to dahi ko sabhi ke thande hone par milakar tadka daliye.

Poha Potato Cutlets


Hello friends, 
Me hoon Sangeeta Agrawal aur mere blog par aapka bhaut bahut swagat hai doston. Cutlet ko hum aksar bread ke saath banate hain par aaj hum cutlets ko poha aur cornflour ke saath bana rahe hain jisse yeh zyada crunchy banenge. Meri aaj ki recipe hai Poha Potato Cutlets. .

# INGREDIENTS
  1. 250 grams potato
  2. 100 grams poha
  3. Salt as per taste
  4. 1spoon red, green and black chili
  5. 2 tablespoon chopped ginger,1 teaspoon lemon juice
  6. Onion and garlic if you like
  7. 2 tablespoon cornflour and 1 tablespoon all-purpose flour for dipping cutlet
  8. Ghee or oil for frying cutlets

# METHOD OF MAKING
  • Sabse pehle poha ko kai baar paani me dhokar chalni mein rakhiye jisse extra paani nikal jaaye.
  • Ab boiled aaloo (potato) ko grate karke, poha aur sabhi ingredients ko mila kar tray yaa plate mein set kariye aur cutlet cutter se shape dijiye. 
  • Agar cutter na ho toh round, oval yaa kisi lid se bhi cut kar sakte hain. Ab saare cutlet ko cornflour ke thin paste me dip karke breadcrumbs mein lapetkar deep yaa shallow fry kijiye.
  • Lijiye poha potato cutlet taiyyar hai. Apni pasand se sauce/chutney aur chai/coffee ke saath enjoy kijiye.


# THINGS TO CONSIDER
  1. Agar cutlet dough soft ho jaaye to maida, cornflour, oats, daliya, bread crumbs or anything you have, mila kar fridge me rakhiye. Aur agar dough dry jo jaaye toh paani yaa doodh milakar soft kariye.
  2. Agar cutlet ko pehle se banakar fridge me rakh le toh splatter nhi hote.
  3. Breadcrumbs ki jagah til (seasame seeds) bhi laga sakte hain.

Fried Dal Bati With Milk

Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Daal Baati Churma ko hum sabhi khaana pasand karte hain. Par zyada ghee ke intake ki wajah se hum avoid kar dete hain. Aaj ham baati ko utni hi swadisht bana rahe hain but ek alag twist ke saath... hum doodh ke saath banayenge aaj.

# INGREDIENTS

  1. 250 grams aata (wheat flour)
  2. 2 tablespoon sooji (semolina) if you have
  3. 1 tablespoon Salt..( ajwain is optional )
  4. Ghee or oil for frying baati
  5. doodh for kneading the aata as needed (if winter season is there then take lukewarm milk)

# METHOD OF MAKING

  • Pehle hum aanch par kadhai me paani boil karne rakh denge, tab tak aata, sooji aur salt daal kar milk ki help se ek tight aata (dough) laga lenge...( Pani ka use nahi karna h..Isse vajah s hi baati khasta banti hain...Aur ghee or oil bhi soak nhi karti hain.
  • Aata poori ke aatay se thoda sa tight. Aate ko masalna (smooth) nahi karna hai only collect kar choti choti muthiya banani hain. 
  • Jab kadhai ke paani me tez ubaal aanay lage tab hi dalni hain jisse baati ka aata pani naa soak kar paaye aur pak (cook) bhi jaaye.
  • Ab boiled water me daal dijiye aur thodi der me chala kar medium gas  kariye. Bati pakne par upar aa jaati hain aur kuch white jaisi drops baati ke upar aa jaati hain.
  • Boiled water me bahut jaldi pak jaati hain baati. Ab isi samay (time) baati ko turant ek chalni mein palat dijiye aur poora pani sukhne ke baad garam garam hi muthiya ko 2,3 pieces me cut kar mixer me halka sa grind kar aata taiyyar ho jaata h. Kisi mesher se bhi aata bana sakte hain.
  • Ab phir se aate ko only bind karna hai, masalna bilkul nahi hai. 
  • Ab aate ka roll banate huye choti choti loi todkar ek chakle par haath se dabakar ek bartan me rakhte jaiye. Jab bhi khani hon deep fry kariye yaa shallow fry kariye kyonki aata pahle se hi paka hua hai.
  • Lijiye ekdam crispy baati taiyyar hain.


# THINGS TO CONSIDER

  1. Aata ko sakht lagana hai jisse aata paani nahi soak kar payega.
  2. Paani me tez boil aa jaaye tab aata muthiya daliye jisse paani under na jaaye aur pak bhi jaaye.
  3. Traditionally baati ko pure desi ghee mein hi fry kiya jaata hai
  4. Taltay samay (fry karte time) ghee or oil ko tez aanch  par karke baati ko chod dijiye kadhai mein phir thoda sa sik jaane par aanch slow kar baati fry kariye.

Instant Appam cake

Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Hum sabhi ko cake bahut hi pasand hota hai. Par banane me thoda time lagta hai. Isliye aaj hum cake ko appam pan me bana rahe hain jo ki 5 minutes me ban kar taiyyar ho jaata hai. Meri aaj ki recipe hai appam cake.

# INGREDIENTS
  1. 1 cup sooji (semolina)
  2. 1/2 cup condensed milk
  3. 1/2 cup powder sugar
  4. 30 grams salted butter
  5. 2 tablespoonn tutti-fruity for vanilla cake
  6. 1 tablespoon cocoa powder for the chocolate cake
  7. 1/2 tea-spoon vanila essence or ilaichi powder
  8. 1/2 spoon baking powder and 1/2 teaspoon baking soda or you can use Eno fruit salt (2 teaspoons)
  9. some milk for mixing the batter

# METHOD OF MAKING

  1. Pehle ek bowl me dry ingredients daal kar 2 baar chalni (sieve) me chaan lenge jisse achhi tarah mix hone ke saath air banne lagti hai aur cake achha spongy banta hai.
  2. Ab isko 2 part me divide karke, ek me tutti-fruity aur ek me cocoa powder mix kar alag rakh dijiye.
  3. Phir ingredients ko achhi tarah phent kar (beat) fluffy bana lijiye.
  4. Ab aadha-aadha (half.. half) batter ko do bowls me transfer karke doodh ki help se semi thick batter bana lijiye. 
  5. Ab appam pan ko greased (chikna) kar halka preheat kariye. 
  6. Eno salt yaa baking soda mila kar ek spoon se aadha fill kariye. Appam stick yaa fork ki help se ulat palat kar bake kariye.
  7. Thanda hone par cake ke upar honey daal kar tutti-fruity aur chocolate chips se garnish kijiye. Lijiye yummy sa cake taiyyar hai.


# THINGS TO CONSIDER
  1. Semolina ki jagah (place) par wheat aata, all purpose flour (maida) bhi use kar sakte hain.
  2. Appam pan me cake ko 30 seconds me check kijiye. Yeh  bahut jaldi bake ho jaata hai.
  3. Agar condensed milk naa ho toh dahi daal kar bhi bahut tasty banta hai.

Oats Milk Kalakand

Hello friends,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai doston. Oats (jaee, jwar) ko aaj hum mithai ki form mein bana rahe hain. To aaj ki meri recipe hai oats milk kalakand.

# INGREDIENTS
  1. 1 kg.full cream milk
  2. 200 grams cheeni
  3. 2 tablespoon well roasted and grind oats
  4. 1 tea-spoon alum (fitkari)
  5. 100 grams grated paneer
  6. 1 teaspoon ghee
  7. 1 teaspoon hari ilaichi powder (cardamom powder)
  8. 2 tablespoon finely chopped and roasted dry fruits

# METHOD OF MAKING
  • Sabse pehle kadhai me ghee daal kar chopped kaaju aur badam ko roast kare. 
  • Phir oats ko slow medium gas par bhoon kar nikal lenge. Ab isi kadhai me doodh (milk) daal kar boil kariye. 
  • Doodh me ubaal aane par 1 tea-spoon alum daal kar milk ko lagataar chalate rahiye. Doodh me oats milakar thick hone tak chalana hai.
  • Ab cheeni aur paneer milakar chalaiye. 
  • Dry fruits and ilaichi (cardamon) powder mix kar niche tali mein se ragadte huye jamne ki consistency tak chalakar greased container (chiknai lage bartan) me transfer kariye.
  • Thanda hone par apni pasand ke aakar me cut kijiye. Lijiye oats kalakand taiyyar hai. Dry fruits se garnish kar serve kijiye.

# THINGS TO CONSIDER
  1. Alum is beneficial for health and it enhances the taste of kalakand.
  2. Oats ko doodh me grind aur roast karke ke baad daaliye.
  3. Agar kalakand set nahi ho paaye toh fridge mein rakhiye.

Cool Curry Cucumber Curd

Hello friends, 
Me hoon Sangeeta Agarwal aur mere blog par aapka bahut bahut swagat hai doston. Aajkal summer season hai aur kheera ko salad aur raita ke roop me sabhi pasand karte hain qki yeh thandak deta hai.
Aaj ham cucumber (kheere) ko bahut saare curry patta k saath bana rahay hain jo ki super healthy hota hai. Meri aaj ki recipe hai curry cucumber curd.


# INGREDIENTS
  1. Ek bada guccha (a big bunch) curry patta
  2. 1 kheera (aadha kassa hua aur aadha slice m), half grated and half cut in slices
  3. 1 teaspoon kaala aur sendha namak
  4. 1 pinch of hing 
  5. Bhuna hua jeera (roasted cumin seeds)
  6. 1/2 teaspoon sugar
  7. 3 tablespoon dahi (curd)
# METHOD OF MAKING
  • Curry patta ko acchi tarah dhokar ek ghanta (1 hour) paani me bhigo dijiye jisse yeh soft ho jaayen.
  • Ab curry patta ko dahi, namak, heeng ke saath grind kijiye. 
  • Ab mixture me grated kheera aur bhuna jeera mix kar kheera slice se sajakar (garnish) thanda kar  serve kijiye.

# THINGS TO CONSIDER
  1. Acchi rangat (colour) ke liye zyada der pehle naa grind kare.
  2. Paani ka use naa kare isey banate time.
