Kachhe Aam aur Hari Mirch ka Paani wala Achaar


Hello everyone,
Me hoon Sangeeta Agrawal aur mere blog par aapka bahut bahut swagat hai.
Aam ka paani wala achaar khichdi, daliya aur bhature ke saath bahut hi yummy lagta hai aur garmi me to turant hi taiyyar ho jaata hai.

# INGREDIENTS
  1. 250 grams kachha aam
  2. 50 grams hari mirch (green chili)
  3. 1-liter mineral water yaa paani ko boil karke thanda kare
  4. 3 tablespoon sendha namak
  5. 2 tablespoon peeli sarson (rai) or kaali sarson (rai)
  6. 1 tablespoon lal mirchi (red chili powder)
  7. 1 tablespoon saunf
  8. 3 tablespoon haldi (turmeric powder)
  9. 1/2 tea-spoon methi and ginger powder if you have, not much necessary
  10. 1 tablespoon sarson ka oil (mustard oil)
# METHOD OF MAKING
  • Kachhe aam aur hari mirch ko acchi tarah dho kar clean kariye. Ab ek bartan (pan) me 1 liter paani (water) garam kariye.
  • Tab tak aam ko bina cheelay hi cut kariye. Hari mirchi ke seeds nikal kar sabut (whole) ubalte paani (boiled water) me daliye aur gas (aanch) off kar dijiye. 
  • Aadha ghanta (half an hour) baad aam aur hari mirch ko chalni (sieve) me sukha lijiye. 
  • Ab sabhi masale ko mila kar aadhe masale ko aam aur hari mirch par lapetakar or bharkar alag 1 ghanta (1 hour) rakhiye aur aadhe ko 1 liter mineral water me mila dijiye. 
  • 1 ghante baad aam ke pieces, hari mirchi aur mustard oil ko mix kijiye. Lijiye khatta aur chatpata achaar taiyyar hai.
# THINGS TO CONSIDER

  1. Achaar rakhne ke liye container clean ho. Glass container should be boiled and sterilized.
  2. Mustard oil daliye jo ki swad ke saath saath preservative ka bhi kaam karta hai.
