I am here with a simple but necessary recipe of "Moong Dal Khichdi" specially for students, bachelors, beginners and newly married people.
Moong Dal Khichdi is a complete healthy food in itself,made with rice,dal ( lentils ) and some simple spices like... Turmeric and salt and tadka of asafoetida ( heeng )
And cumin seeds ( jeera ) and very little red chili.

It is served with yogurt, papad,achar (pickle ) and a dollop of ghee on the top of khichdi.
Khichdi is also related with illness....Means to say that if you are ill..You can have Khichdi since it is very easy to digest and often Doctors recommend it as a light appetizing food.
It is of two types...
One is like pulao....( Khili hue )
Other is of thick flowing consistency.

It is very simple recipe but ratio can go wrong if you have no idea .. how to go about it.
Here I am trying my best to write everything...How to cook in a healthy way and how to avoid splittering the water of khichdi mixture from the whistle.
Prep Time...5 minutes
Soaking Time ..20 minutes (at least )
Cook Time..10 minutes...( 5 minutes pressure down itself )

Ingredients...
1. Moong Dal ...75 gram (1|2 cup )
2. Khichdi Rice..75 gram ( 1|2 cup )
3.Turmeric powder..11|2 tsp
4.Salt to taste or according to the water mixture of khichdi
5. Cumin Seeds...1|2 tsp
6. Pinch of Asafoetida ( Heeng )
7. Pinch of Red Chili Powder
8. Fresh Coriander and Whole Red Chili for flavour and garnishing.
9. Water for khichdi...61|2 cup (after cooking it becomes thick )
....Exact Ratio is....6 times more of unsoaked rice and dal and 4 times more of soaked mixture of rice and dal.

9. Water for khichdi...61|2 cup (after cooking it becomes thick )
....Exact Ratio is....6 times more of unsoaked rice and dal and 4 times more of soaked mixture of rice and dal.
Method of Making...
# Take rice and dal in a bowl.Soak it in enough water at least for 20 minutes.After that drain the water and set aside.
# Add half spoon ghee or oil in the pressure cooker,after heating it ..Add cumin seeds to crackel ...Then add asafoetida ( good for digestion and flavour ) turmeric powder and soaked

Add the measured water or accordingly.

# Let it boil on the high flame.As the water of khichdi starts boiling high... Immediately at this stage separate the all the foam of the khichdi water.
By doing this step,you can remove all the impurities of dal chaval...(Healthy step of cooking )
Dadi, Nani and Mummy do this step while cooking in any pan.

# Now add a little oil or ghee on the all round sides of cooker from avoiding the splitting of khichdi water from the whistle...This step minimises the cooking time of khichdi or even all types of Dal.
# Now pressure cook the khichdi on high flame for 2 whistle and sim the flame and cook for 7 minutes around.Off the flame.
# Let it pressure down by itself...Since it cooked itself in the steam of cooker....
It tastes soft and meshy.Set aside.

# , Now prepare the tadka of khichdi.
Add a little ghee or oil in a tadka pan....After heating it add cumin seeds and mustard seeds ( optional ) .
Wait till seeds start sizzling and pop up...Then add asafoetida, chopped ginger and green chili to taste.
Saute a little.Off the flame..Then add a very little red chili powder (optional )

# Add the tadka in the cooked khichdi and mix well.Check and adjust accordingly.
#Garnish it with fresh cilantro and extra ghee on top or as choice.
# Khichdi is usually served with papad, yogurt (dahi ) and achar (pickle ).
Now khichdi is ready to serve.You can eat it any time of your meal.
Note...
1. Have enough water while cooking the khichdi...Otherwise it can stick in the bottom.
2. You can make" Veg Masala Khichdi" by adding lots of veggies of your choice.
