Spinach Stir Fry ( Palak ki sukhi sabhi, Palak ki Bhujiya )

Here I am present with an instant and super healthy recipe of...."spinach Stir Fry"
Spinach is full of irons, fibres And vitamins.
It is very nutritious and takes minimum time to prepare.
Spinach is extremely beneficial for blood, hair, skin and constipation.
Just 1|2 cup of cooked spinach gives you thrice as much as nutrition as 1 cup of raw spinach.
Today I am sharing my mother's recipe which she used to make for my father.

# Prep Time...15 minutes
# Cook time.....10 minutes
Ingredients........
1. Spinach....250 gram
2. Tomato....1 ( optional )
3. Green chili..2 (finely chopped )
4. Red chili.....1|4 tsp ( optional )
5.Ginger...2 spoon grated or finely chopped
6. Pinch of asafoetida ( hing )
7. Cumin seeds...1|2  tsp ( jeera )
8. Turmeric powder..1|2 tsp ( optional )
9. Salt to taste....Or 1 tsp
10. Butter ......1 tbsp (Deshi ghee or oil )
# Method of Making Spinach  Dry Curry...
# First remove stalks of spinach and wash it thoroughly in an open water.
Again wash it in the lukewarm water adding some salt.
# on the flame and place a pan with some water ( 1 bowl) .Add the spinach ...Let it boil for 5 minutes without covering for maintaining the nice greenish colour.
# place it in the sieve.Let the spinach dry completely.Then grind it roughly with a roller pin or mixer.
# Then heat a pan or wok ( kadhai ) add butter or ghee | oil.When ghee gets hot ....Add cumin seeds to crackle.Then add asafoetida or hing... Add chopped green chili and ginger.Saute it 1 minute for good taste and aroma.
# Now add turmeric powder and chopped tomato.Saute it till tomato gets soft.
( This is a optional step..Without tomato too "spinach stir fry" tastes yummy and healthy.
# Now add crushed and grind spinach.Saute it for 2 minutes and cook the sabji as it open so that juice of spinach evaporates.
# Sabji is ready within minutes.
# Add the tadka of hing,jeera with chopped green chili and ginger.
This is the main step of this spinach curry.
# Serve it with chapatti or roti ( bread )
Things to Consider..
# Green leaves vegetables are surely very healthy but wash them properly with warm water.
# Another method of making " Palak Fry "
Is that chop or dice the raw spinach and tomato.Then after adding cumin seeds, asafoetida , turmeric,green chili and chopped ginger...Add tomato.and saute it till tomato gets soft.
Then cover and cook the curry for 5 minutes, stirring and checking it.
Both method are perfect as you are comfortable.
